Easy and Hydrating Watermelon, Feta, and Cucumber Salad

🍉🥒 What's in this easy summery, super-hydrating Watermelon Salad?

This is one of my favorite go-to salads, because it's easy, filling, hydrating, delicious, and everyone loves it. You don't even need a dressing! This salad truly dresses itself. This Easy Watermelon Salad is the perfect bowl of happiness to complement your sun salutations. Combining fruit with savory elements creates a divine, palate-pleasing dish. This salad dances between the sweet, juicy bursts of watermelon and the refreshing crunch of cool cucumber.

Watermelon: Choose a small watermelon or half of a large one, then cube it or use a melon baller for a fun twist.

Cucumber (English or Hot House): If you can, go for English cucumbers - they're sweeter and need no peeling. Some like to peel and seed their American slicing cucumber - yogi's choice. :)

Mint and Basil: Fresh mint and basil leaves (around 15 each) bring a pop of bright, refreshing flavor. Roughly chop or tear them for a rustic touch.

Feta Cheese (or crumbly plant-based alternative): Crumble about half a cup of feta, preferably from a block packed in brine for extra creaminess and balanced saltiness. Lime: Half a lime will brighten this dish and add extra mouth-watering acidity! Optional: Sliced red onion: Cut your red onion into thin smiles for an added kick!

Pistachios: They add SUCH a fun, salty crunch

Ingredients for the Watermelon Salad

  • 1/2 a lime's juice

  • pinch of salt

  • ½ watermelon cut into cubes (no rhine)

  • 1 English or Hot House cucumber, cubed or quarter coined- shoot for 2 cups full

  • 12 fresh mint leaves, chopped - or your heart's desire!

  • 12 fresh basil leaves, chopped - or as much as makes you happy!

  • ½ cup crumbled feta cheese - measure with your heart!


Instructions for the Watermelon Salad


Let's make Salad Magic: In a large bowl or a serving platter with sides, combine your watermelon, cucumbers, and fresh herbs. Allow the ingredients to mingle!

Spritz and Serve: Squeeze your half lime over your salad and top with a pinch of salt. Give it a gentle toss and serve cooled. Enjoy!
